It’s a Christmas shopping trip with the family. We have not been out too long, but I notice my energy levels are starting to drop. I do not drink much coffee though I have discovered a cup around 3 pm keeps my energy levels up for the rest of the day.
After the first sip, i realise it is not a good coffee, it's a bad coffee. It’s on this trip I decide I am not going to put up with bad $6 coffee anymore.
I do wish I had this epiphany 20 years ago, but here we are. I have become such a coffee nerd that I can now consistently make my morning coffee better than the local coffee shops.
All the coffee beans at the supermarket are already too old
I have discovered the two necessary steps in making my coffee. The age of the beans and how they are ground. Here is a little tip, all the beans you buy from you local supermarket are already too old even if the pack says the best before date has not passed yet.
The first step is good coffee beans
So here are the rules when buying your coffee. Good coffee has to be used between 5 to 15 days after it is roasted. So you only have a ten day period when good coffee beans are exquisite. During the grinding process, you can compensate for coffee that is a little older, but you can not compensate for coffee that is too old.

Step 2 how the beans are ground
The second step it to watch the water go through your coffee. If it goes through between 7 and 11 seconds, then it has been ground correctly, and you will be enjoying the best coffee you have ever had. If it takes longer than 11 seconds, you need to make your grind smaller. If it is shorter that 7 seconds you need to make your grind bigger. You will also find this changes as the beans get older. You can not just set and forget you have to check each time and make small adjustments, so your next cup is just as good.
Step 3 make sure all the other settings are where they should be
When making coffee how the beans are ground is the only variable you need to compensate for. As long as your water is heated to 93 degrease, your milk is frothed and heated to 65 degrease and your coffee is compacted firmly after it is ground.
The way I found to get the basic things correct was to spend $2500 of a new coffee machine. The coffee machine I selected heads the water to 93 degrees and froths my milk with the consistency I like to 65 degrees.
So do I continue to spend $6 on a hit and miss take away coffee or do I spend $2500 once and have great coffee every time. The choice was easy for me as $2500 decided by $6 is 416 takeaway coffees. That is only just over one year of coffee drinking. So I spend $2500 on a new machine. The price even included someone to come to my house and set it up and show me how to make great coffee.

Step 4, the most important step
So when you next go looking for your coffee beans for your coffee machine look for the roasted date. It must be roasted date not a best before date. You may need to change your shopping habits. You will not find beans like this in your local supermarket. The best place to look is your local coffee shop. The real good ones will have the same beans they use for sale. Some of the exquisite coffee shops will have a roasting machine in the coffee shop. So they roast and package the beans in front of you.
Try to find one close to where you live, as you do not want to travel for an hour every ten days for coffee beans unless you're like me.
One last tip. Get one of those mugs that keep your coffee hot. Then you have the luxury of making the coffee before you go out and keeping it with you until you want to drink it. It tastes the same as if you just made it.
It has been almost a year now, and I have not had a bad coffee since. I think I made the correct choice in getting a new machine. Something my friends say every time they come over to coffee and chat.
